  • 1 cup quinoa, rinsed and drained

  • 2 cups water

  • 1 large cucumber, diced

  • 1 large red bell pepper, diced

  • 1/4 red onion, diced

  • 1/2 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1/4 cup extra-virgin olive oil

  • 1/4 cup fresh lemon juice

  • 1 garlic clove, minced

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon freshly ground black pepper

  • 1/2 cup crumbled feta cheese (optional)


  • In a medium saucepan, combine the quinoa and water. Bring to a boil over high heat, then reduce the heat to low and simmer for 15-20 minutes, or until the quinoa is tender and the water is absorbed.
